I'm in Baking and Pastry now, so its back to the 12-5 schedule.  I'm also taking 3 hours of regular Summer School on top of that, plus still caring for my grandmother.  My weekends have become precious and distant!&lt;br /&gt;&lt;br /&gt;Baking is zen.  Its keeping me sane through a crazy-ass summer. She's been following me around for the past 24 hours, even more than usual.  Most of the time, she's really just interested when I'm walking in (or out) of the door, in the kitchen, or getting her doggie food. Last night, she tucked herself so tightly next to me under the covers that I almost wanted to schooch her away a bit...but didn't.   This morning, she was on my heels as I stripped the sheets off my bed, standing outside my shower door, and is currently sitting on my feet beneath my computer desk.  She's not overly doting, mind you, she's just close. I guess this is what dog people say is them detecting how you feel? I know, rationally, that this couldn't be helped, and I needed to do it, but it was FIESTA weekend.  We had a HOTEL downtown.  One day was simply not enough, and coming back to this apartment was not top on my list of things to do yesterday.  Although my grandmother assured me that I was still "off", she managed to wake me at 5:30 to make her coffee, 9:15 to make breakfast, and 10 to run her a bath.  HELLO?  Argh, old people have absolutely NO concept of how self-centered they can be.  &lt;br /&gt;&lt;br /&gt;I cannot WAIT until July 30.  She moves in with my mom for good and I am FREE.  &lt;br /&gt;&lt;br /&gt;Still job huntin'...got a pretty decent "trial" gig with a caterer in town- I'm going to do chef prep for a couple of events (paid, thank goodness) and see how I'd like externing from there.  Although that's going to be cool, my eyes are set on a certain state-wide Monthly magazine internship with the food editor...keep your fingers crossed.&lt;br /&gt; &lt;br /&gt;Ok, 10:03 am. I have yet to determine how I feel about this, but I'm sure I'm happy about it.  &lt;br /&gt;&lt;br /&gt;Last night was great.  Great friends, good food, significant booze consumption.  MJ hit  his stride about 7pm, and we all laughed until we cried.  My abs are sore today from laughing so hard. This situation has caused my brain to go into complete throw-back mode, since last week was blazing saddles from Monday through Saturday.  It feels like College. Time flies when you're cookin' protien, I guess!  This week is going to be crazy-&lt;br /&gt;&lt;br /&gt;Today and tomorrow, we prep for buffet (Pacific Rim theme)&lt;br /&gt;Wednesday, BUFFET! &lt;br /&gt;Thursday:  Practical Exam- I'll be preparing two plates, one with chicken and green beans, one with zucchini and New York strip.  My boyfriend and grandmother are two very lucky guinea pigs, as I must practice beforehand.&lt;br /&gt;Friday:  written exam, then prep for the wine and food festival this weekend.  If any of you want to go, I can get discounted tickets!&lt;br /&gt;&lt;br /&gt;In the midst of the nuttiness, I still must remain faithful to my workout commitment. This week has been slower than Christmas.  I'm not sure if its the spring weather, the mounting stress of finals week, or the fact that I'm going home to SA for the weekend that's made it take so long.  But here it is!  Finally!&lt;br /&gt;&lt;br /&gt;After five days of Body for Life, my body is freaking sore.  Hopefully this trend will lessen in the weeks to come, because getting up in the middle of the night to stretch my hamstrings is not my idea of a peaceful nights' sleep. &lt;br /&gt;&lt;br /&gt;Oh, and yesterday I had to clean out the deep fryer at school.  I now have true empathy for all employees of Kentucky Fried Chicken and the like.  Sick, dude.  Sick. I played hooky from school yesterday, and today was the BBQ contest at school.   Although it was moved inside due to rain, the grub was still mighty tasty.   Tonight looks like another DVD night in...as I have given up alcohol for at least two weeks before beginning the Shape Up mission and truly becoming serious about it.  Funny, besides going to a movie or staying in to watch one, there isn't much to do on the weekend that doesn't involve drinking in some form or fashion.  "Hey, wanna meet for a milkshake?"  doesn't seem to be in most of my peers' vernacular.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Hm, I'm over it. Don't we SCREEN these people to ensure they have at least a shred of intelligence?  I would think that a semi-cognizant human being would be able to distinguish between Hollywood FICTION and a real murder case.  &lt;br /&gt;&lt;br /&gt;&lt;br /&gt;((Sigh)).  Might I suggest, if your voters' registration number has you up for jury duty in the immediate future, &lt;em&gt;skipping &lt;/em&gt; your Monday night CSI: Miami ritual? Let's acquit this guy, even though there's circumstantial evidence out the WAZOOO that he shot his wife."  Come on, people.  Didn't your mommies ever tell you not to believe everything you see on TV?  What I found most disturbing was the interview on The Early Show with one of the CSI: Miami producers who commented that he found it to be "ultimately interesting" that his show had made such a drastic impact on our judicial system.  Uh, yeah, and its also allowing killers to go free, buddy- how do you feel about that?  &lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Here's a tip- if your voters' registration number comes up for jury duty in the next few months, skip the Monday night CSI ritual. Between tooth extractions, root canals, and grandmommy-carting, I think the only difference between this week and normal ones is that I sleep an extra 30 minutes each morning.  I was reflecting, however, on spring breaks past...&lt;br /&gt;&lt;br /&gt;Let's see:&lt;br /&gt;&lt;br /&gt;Freshman Year, Vandy:  South Padre with wayyyyyyy too many self-interested females.   I distinctly recall a feeling of utter exhaustion and alcohol surfeit upon flying back to Nashville.&lt;br /&gt;&lt;br /&gt;Sophomore Year, Semester off:  This spring break was the best- Mac, Mom and I went to Costa Rica.  I know you aren't supposed to have a blast with your parents, but this trip was an exceptional one.  Hm, good thing I had a survival guide from a pal who'd visited a few weeks earlier.  :-)&lt;br /&gt;&lt;br /&gt;Junior Year, UT- London:  Um, let's not go there.  Let's leave it at this:  I could definitely do without ever seeing that city again.&lt;br /&gt;&lt;br /&gt;Senior Year, UT:  Trip to Jackson for St. Patty's day.  Fun crawfish boil, less-than-desireable company. These days, I rise at 6:30, hit the gym for my morning run, come home, make breakfast for Grandmommy, shower, study...go to school...come home, walk the pup, go to Pilates, come home, make dinner, study...go to bed.  Wow, my life is really exciting, eh?  Hey, its routine...and I, of all people, am a creature of habit- I think I thrive best this way.  But I'm exhausted by 10pm, and I'm so happy to hit the pillow. I'm pumped.  Highlights will be miniature BLT's with home grown t'maters, fried okra with saffron Aioli dipping sauce, and venison tenderloin with garlic mashed potatoes.  I'm heading up the dessert team (big surprise there) and we're going to feature individual lattice-topped blackberry pie, buttermilk pecan pie, and chocolate-chip walnut cookies...with milk of course.  &lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Fun stuff.  &lt;br /&gt;&lt;br /&gt;I burned my finger today attempting to remove braised fennel from the oven.  Ouchie.  P.S., fennel is nasty and tastes like licorice.  Bleh.  &lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Tomorrow is Thursday already?  This week is flying by.  I have to get a filling tomorrow before class...so everyone pray for me handling cutlery after local anesthesia. That's a sign.  DRINK."&lt;br /&gt;"I'm alright.  You run along back to bed."&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;2:30am:&lt;br /&gt;"I just feel shaky.  And achy."&lt;br /&gt;"Well, you didn't eat dinner.  Try eating some crackers and juice."&lt;br /&gt;"No, my tummy's upset."&lt;br /&gt;"OK, then just the crackers and some Sprite, then."&lt;br /&gt;"No, I'm fine. This week flew.  Funny how running my butt off, cooking for 5 hours, and taking care of Grandmommy can make time go by at lightning speed.  I kinda like it that way.  &lt;br /&gt;&lt;br /&gt;&lt;br /&gt;So I got a text from Clif, one of my friends from high school, at 1:51 am, that said:  "I don't know why you left Vandy.  I love it!"&lt;br /&gt;&lt;br /&gt;Assuming he was drunk and about to hop in bed with a VandyGirl (this is not far-fetched, mind you:  another one of my best guy friends from high school was treated to such an experience last year by my ex-boyfriend), I called this morning to get the scoop.  Turns out he's in KNOXVILLE visiting a pledge brother.  &lt;br /&gt;&lt;br /&gt;&lt;br /&gt;"Wait, Clif, why did you text me about Vanderbilt when you're in Knoxville?"&lt;br /&gt;&lt;br /&gt;"Um, 50 cent Pabst Blue Ribbon pints at some place called the Shady Mushroom."&lt;br /&gt;&lt;br /&gt;"Oh, well that makes sense then."&lt;br /&gt;&lt;br /&gt;"Yeah.  Hey, Do you think your brother will give me a job when I finish law school?"&lt;br /&gt;&lt;br /&gt;Oh, Cliffy. After fighting with cancer and losing his show crew to Jackass (that's gotta hurt), Tom Green is making a comeback in his own quirky way.  He's doing spots on Leno covering the "most interesting people in the country", and the Texas episode is set to air on Friday night...he didn't hit up Austin (which is just plain strange), but supposedly he chats with some cowboys at Gruene Hall. Monday marked the beginning of CA102, which is all about protien.  Aside from the fact that I'm going to have to eat cow thymus glands (also known as sweetbreads) and filet of rabbit, I'm totally psyched. &lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Its amazing how much my attitude is improved by just being in the freaking lab!  I again have purpose!  Today I learned how to butcher a side of beef to fabricate the sirloin, bottom round, and strip steaks.  Little Lizzie the butcher...who knew?! &lt;br /&gt;&lt;br /&gt;Tomorrow we start plating full meals- Roast au jus with jardinere of veggies and pommes Dauphinois, Pork tenderloin stuffed with apples and rasins. And now, its finally over.  Monday, we go back into the kitchen for CA 102- Meats and protiens.  This class is going to be bad-ASS.  This is where we actually start plating full meals- like beef wellington and asparagus Mousseline with Roesti potatoes.  FUN!  I'm so pumped. &lt;br /&gt;&lt;br /&gt;I have been complaining about the so-called "Gen-Ed" block for six weeks now, and I do not take any of it back.  It was quite certainly the most boring, unproductive term yet...but its DONE. What I discovered is that Democrats &lt;a href="http://homepage.mac.com/c.shaw/BushBulges/PhotoAlbum15.html"&gt;are clearly, once again, just sore losers.&lt;/a&gt;  Um, so he wears a bug while driving around in Crawford?  Don't think so.  He also alleged that it was "proven" that the President was receiving information, which is simply false.  You know, I made it through one of the most liberal schools in the United States, and managed never to dislike a professor because of their political affiliation- probably because they were all INTELLIGENT.  This guy is most certainly an overglorified high school teacher.  Who needs to get his facts straight. Hopefully padding out 3 miles on the treadmill every morning plus a couple of pilates sessions will allow me to maintain functionality...Thankfully, I'm not taking Zoloft, so Grandmommy should be safe.&lt;br /&gt;&lt;br /&gt;Three finals in the next three days. Catering a wedding reception of 40 guests. Finding a storage unit and beginning the moving process for next month. How did everything creep up on me so fast? I swear I didn't spend the last six weeks procrastinating...&lt;br /&gt;&lt;br /&gt;I can't WAIT for next week to be here. Hopefully I'll be reminded of why I love culinary arts - Hospitality Supervision ain't doin' it for me. My irritability must be increasing as the term nears its crescendo- my political arguments with Tom, our Public Speaking teacher have amplified drastically. The man is just over five feet tall, and a voracious democrat. Enough said. Yesterday, we duked it out over gun control. Nice little stress reliever to kick his ass intellectually.&lt;br /&gt;&lt;br /&gt;Oh, and Grandmommy. If you ask me, the woman has it pretty damn good- her entire family, with the exception of one son, live within ten minutes of her. All of us bend over backwards on a daily basis to maximize her happiness and feelings (however fudged) of independence. Yet, she still insists on making her "Wednesday Calls" to every extended relative still living to inform them that she's "doing (sigh) alright, but (sigh) not great, and very (sigh) confined to her apartment." Hearing this while I'm preparing bacon and eggs to serve her in bed is slightly more than mildly annoying. I'm sure my mother, who carted her to and fro her "geriatric massage" and pedicure last weekend would agree with me. They say people become more self-centered with age...I think I'll second that and suggest its the understatement of the year.&lt;br /&gt;&lt;br /&gt;Wow, Liz...negative blog entry. Hey, isn't that what this thing is for? I find it quite therapeutic. Happy  Best weekend I've had in recent memory. Its super cool looking, but come on- 7500 gates, constructed by PAID workers, only to stay up a little over two weeks?  &lt;br /&gt;&lt;br /&gt;Crazy artist-peeps.  Oh wait, I have a flaming red streak through my hair at the moment.  Perhaps those who live in glass houses should not throw stones (or culinary tools?)...&lt;br /&gt;&lt;br /&gt;Its FRIDAY!  Second tasting of the week in Wine and Beverage- yesterday my dentist begged to come with me...maybe if she could magically make my FIRST CAVITY EVER disappear, I could magically make her a TCA student for a day.  Ha!&lt;br /&gt;&lt;br /&gt;I'm going out with Sunny bunny and Kevin tonight- they're in town for a wedding.  I haven't seen them since THEIR wedding in October, so I'm excited. She claims mine will get there...so I weekly endure an hour of PAIN in hopes that she's right.  Microdermabrasion involves chafing the skin with circulating crystals- that feel somewhat similar to sandpaper- which in turn slough off dead skin cells.  It is making a huge difference...I must say its been worth it.  After four of six visits, my skin tone is awesome- especially since its the middle of winter and I have NO tan.  Anywho...fellow Austinites should check her out.  &lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Off to class for Dessert Wine Tasting Day.  Yeeeeehawww. It sounds far away, but it is a deadline to live by- Oct. 4th is the date I start my externship according to my TCA calender.  That means I'll have to be located, set up, and employed by 10/04/05.  I'm thrilled with the idea that I'm actually going to be able to SAVE enough to move somewhere new ON MY OWN.  My terms. To my delight, I found that the newest album by The Lost Trailers was available for download.  I jumped at it, of course, and am now enjoying the latest cuts of my fave TLT songs.  God, I forgot how much I love this band.  Only a few bars of "The Battery" bring back strangley clear memories of the Exit/Inn in Nashville, where Vandypeeps and I rocked out as John Stokes (the lead singer) crooned just feet in front of us.  I distinctly remember a show in January of 2002, when Ashfor and Eric and I went to see them- Ash...do you remember stealing the rubber Jack Daniels drink mat?  Goooood times. It is FINALLY Friday.  Talk about a long ass week of emotional highs and lows.  I am proud to report that tomorrow I will be the guest baker at Broadway Daily Bread on De Zavala Road in San Antonio.  Beginning tomorrow at 5am, I will have the opportunity to release all of the tension that has built up over the last two weeks of being out of lab in school.  I can't wait. I was surprised to find that their album cuts of their songs are completely different from their radio versions.  In a positive way- very acoustic, and the lead singer has awesome vocal range.  So I'm driving along, enjoying my mellow, upbeat tunes, when the song changes.  The last song on the album "Songs About Jane" is the band's cover of "Highway to Hell".  How RANDOM is that?  I honestly thought my CD player had somehow turned itself off and somehow switched to FM radio.  Is there like a seven song minimum for a record label or something? Since she refuses to move to assisted living, and the service she hired charges $20 per hour, I offered to take over night duty for some financial help until we can find somebody to live with her for an affordable amount.  I've discovered that this "affordable amount" is not in the salary range for most self-respecting Austin Home Healthcare Professionals, and that I will, most likely, be doing this until I move in October.  The issue of this commitment has taken up residence in my brain over the last six days.  &lt;br /&gt;&lt;br /&gt;  My grandmother clearly adores the company.  I bring Cardinal over there with me, and she stays with Grandmommy while I'm at school (when the service we hire has to come and relieve me).  They are now best buddies.  Every night when I come home, she's snuggled in my grandmother's lap, and they are both happy as can be.  &lt;br /&gt;&lt;br /&gt;  I also enjoy having a human to come home to at night and cook dinner for.  We talk about our days, (well, she fills me in on Juanita's daughter's new boyfriend and slightly skewed statistics from the Tsunami disaster) and I like the interaction and routine quite a lot. &lt;br /&gt;&lt;br /&gt;  But I have realized how much I miss time to let my internal thoughts wander.  Throughout the day, I'm constantly engaged in some sort of prescribed thought process, whether its learning about grape varieties and vineyard growth patterns or paying Grandmommy's bills.  It isn't until after she goes to sleep at 9:30 that I begin my process of winding down from the day, which I am used to doing the second I step foot into my apartment at night.  I'm not used to waiting that long.  Very strange feeling.  &lt;br /&gt;&lt;br /&gt;  I also realized that sleeping in a room with a baby monitor is quite possibly the most expeditious way to become an insomniac.  Depending on which way she's facing, I can hear her breathing, rhythmically.  But when she rolls over (which I don't always hear), the pattern changes.  Without fail I wake up and spend ten minutes making sure she's alive, then I fall back asleep.  I'm looking into Surround Sound baby monitors in her bedroom.  &lt;br /&gt;&lt;br /&gt;Ah, but today and tomorrow are mine!  I'm off to get a facial and a pedicure.  And I must cook tonight to avoid going crazy.  Being out of lab is awful and empty, which is a topic on which I could ramble for another half-hour. As it turns out, my brother, sister-in-law, and niece were all under the impression that an AOL membership is required in order to use the Instant Messenger.  Once they (My niece, Rachael, primarily) discovered this is not the case, all hell broke loose.  Evidently the entire soccer team has AOL, and this is the one "thing" she wanted from Santa.  (At which point I begin to doubt whether my brother was under any sort of "impression" and considered his fondness for time in his study alone on the one home computer).  Instantly, the girl is all over it. &lt;br /&gt;       "Aunt Elizabeth, how do I send a Igreeting over IM that sings to you?" &lt;br /&gt;&lt;br /&gt;       "Um, well, usually I just use it to...(talk to my addicted-since-college friends about how lame our lives are at the present) chat with friends who live far away from Austin!"&lt;br /&gt;&lt;br /&gt;"Oh. I guess they've come up with cooler stuff since then."  &lt;br /&gt;&lt;br /&gt;My brother says I've turned her into a (and I quote) "Foot-stomping-eye-rolling teenager" As for me, I simply realized that I've been addicted to IM since the first downloadable version away from AOL came out (erm, I think...Sophomore year of high school?) I rarely do this for a solid four hours, but after five and a half of THE most boring "General Education" classes I have ever had to endure.  Evidently, I managed to squeeze by the whole Texas law that insists that college students must have a Public Speaking credit because of the year I enrolled in the Univeristy.  This shift in legislature is not of any interest to the PRIVATE culinary academy I attend, who gladly snatch up another 800 of my dollars in order for me to sit through six hours per week in a class where we are learning material I swear is easier than my high school Debate class.  For the next hour and a half, I get to take "Hospitality Management", where I learn all about how the corporate ladder works in the major resorts of the world so we can all march out to dutiful "babychefdom".  Both of these classes are held in a room about the size of my living area, with one gigantic window FACING the main hallway, where everyone (intended and unintended) stares at us dopey-eyed as they turn the corner. &lt;br /&gt;&lt;br /&gt;&lt;br /&gt;I miss my kitchen! I'm obsessed with these kids.  I only hope that one day I get to have some too!  They totally crack me up.  Rachael, who is ten, is the mistress of the house over her little brothers Steven (7) and James (6).  They got a PS2 from Santa, and life has never been crazier.  Star Wars Battlefront or Fifa?  Nascar or Dance Dance Revolution?  The debate is ongoing and progressively louder as the day goes on.  At one point, disgruntled by his sister's dominance regarding the current game. Steven announced, "Rachael, you have a lot of hair on your arms".  (BUURRRN).  Her response?  "I'm a mammal, smart one."  Queen of comebacks.  I'm off to play Twister. This town is pretty nice- he lives downtown, so I've gotten a chance to check out some of the "happenin'" in town restaurants and their fare.  I'm going back to Big D in a few hours, and will soon be reunited with my crazy niece and nephews.  Gosh, I love those kids so much.  My brother says I'm a mommy waiting to happen, but there are several "levels" I need to pass before I get to that point.  I envy the fact that their family actually ENJOYS hanging out together- no pressure, no dictated "family time".  They just like being together.  Foriegn concept. &lt;br /&gt;&lt;br /&gt;Last night I cooked for Matt and the girl here he is trying to woo...(Pauntee, you are AWESOME-DATE HIM!!!)  I made warm spinach salad with feta timbale, tomato bisque, and yummy garlic bread, and matt grilled steaks outside.  It is so nice to share a meal with friends like that!  I'm heading home to Big D in a couple of hours- I've had a  blast, but I miss my kiddos out in southlake, texas. &lt;br /&gt;&lt;br /&gt;I realized this holiday season that the more I stay true to myself and my needs, the happier I am.  No boy issues.  AWESOME!  .....although there is that pesky one I can't seem to get out of my heart....&lt;br /&gt;&lt;br /&gt;....a hopeless romantic?  or maybe a hopeful, silly girl.  Either way, there's always somebody deep down in your heart that you've loved for a long time, and can't seem to blot him out.  You try, but tiny things, like a video game, sting your heart in a blissfully painful way. Its almost as though I can't turn my brain off of it.  This morning, I went to a gourmet grocery store before going to visit my grandmother in the hospita- I was going to buy her some licorice.  I had to DRAG myself out.  I knew I was in trouble when I looked at every single type olives and brines they carry.  I don't even &lt;em&gt;like&lt;/em&gt; olives.  Don't even get me started on the fruit and vegetable section- I had to slap my own hand to get out of there in 20 minutes!  I like studying for this, even though its completely different from anything academic I have ever done before.  So I'm a culinary dork.  I search online for nifty new tools. Not just &lt;em&gt;any&lt;/em&gt; notebook, mind you.  A &lt;em&gt;perfectly constructed &lt;/em&gt;notebook, which is said to be either "completely right" or "completely wrong.  Okay, so we need to be organized.  I'm cool with that.  Typing up recipes after class reinforces them, makes sense...workbook assingnments...makes sense....10,000 words worth of essays on &lt;em&gt;food?&lt;/em&gt;  You got it- for the next week, I am assigned five 2,000 word essays on topics such as "The History of Pasta", "The History of Potatoes.  Does that sound ridiculous to &lt;em&gt;anybody &lt;/em&gt;else?  As though these Chefs are even going to &lt;em&gt;read &lt;/em&gt;10,000 words worth of b.s. from us, the lowly knownothings! &lt;br /&gt;&lt;br /&gt;&lt;br /&gt;So I went back and forth.  Between what made sense (Rebellious Liz) to what would get me a good grade(Routine-Oriented, controlFREAK Liz).  I finally made a compromise.  I wrote 800 words on the History of Pasta.  Faithfully, Diligently.  My final word count is around 1,000, which is half the amount of words assigned.  (By the way, does anybody remember when a teacher COUNTED WORDS?  Last time I checked, my professors in college wanted things consice and to the point.)  But in my last paragraph, I realized I was very hungry.  I did not want to get up before I was finished with my work, so I said, "screw it!"&lt;br /&gt;&lt;br /&gt;Here's my brilliant ending to "Liz Roberts on The History of Pasta"&lt;br /&gt;&lt;br /&gt;&lt;span style="font-family:times new roman;"&gt;That is all I can say about the History of Pasta without making myself completely crazy.  I have actually studied for this class nonstop and am nervous enough about studying for the final that I’m going to hope to God my notebook won’t be thrown away and given a zero.  I’m also really worried about my small dice….fluting a mushroom?  Oh dear, I must review my mother sauces.    What if my hollandaise breaks?  I know that a tourne has 7 flat sides and is shaped like a football!  I make a mean béchamel sauce!  (sigh.)  Be humane.  I do want to be a chef with all of my heart.  I promise.  This is around 800 words and I am exhausted.  Pasta rocks, with any tomato, crème, or beurre based sauce. What did I do, you ask? I slept. Until 4pm. A phone call woke me up from someone I know who prefers not to see the light of day until 2pm on the weekends. (You can imagine the shock when I, miss never-past-9 answers, totally croaky). So being up this late in the day is pretty weird. I can't tell if I want eggs or pizza? I really think I should start eating PowerBars before class. Right now, my biceps are cursing me for all the wire whipping, and my fingertips (all 10, thank you) are blistered from that damn hot pan. But I love it. And I'm starting to get the hang of it. How to deal with the stress and beat the deadline. In college I would start things weeks in advance to finish them weeks in advance. It reduced my stress then, getting a bit done every day, but this craft is so different. You learn the assignment, you prepare the assignment, you cook the food, you present the food. DONE. Begin again, times four. The first few days I was crawling up the walls with nerves. "How am I going to get it all done?" was my initial (and typical) response. I then realized that this really makes sense to me. The adrenaline and energy generated from producing a dish that you taste and are genuinely suprised that it came from scratch under your watch. So I guess I need to build endurance for this "Industry" thing all my Chefs continually refer to. Think about it, honestly- I'm a student, on my feet four hours a day, five (this month Six!) days per week, in a kitchen. Most chefs work 4 and 5 times that amount in one week. Especially if their career is beginning to advance. I'm convinced it is in direct correlation with practice. Perhaps in addition to my morning run I should drill myself on fluting mushrooms? Brunois carrot anyone? His answer? "Blizatch". Now in my mind, this was relatively un-corny...perhaps tell-able later so as not to live up to my constant medal-holder of dumb jokes. I mean, we all giggled? A day later, after my maiden voyage with the line, is not quite so amusing. Seriously, I had to EXPLAIN the joke. That's when you know you've flopped.
